Fondue Sliders with Fries: Recipe

 So many people have expressed an interest in this little meal I make. Although my husband and kids are not too fond of it, for different reasons, I love it! It is probably one of my favorites and I can make it just for me when I need (without the onions and fries). But still, even the dipping sauce for the fries I can make within a minute if we are making something else with fries. Ingredients 1 pound ground beef 12 Brioche rolls 1 large red onion 1/2 oz parsley 1/2 oz chopped garlic  3 russet potatoes  2 tsp smoked paprika  2 1/2 oz thousand island dressing 2 fl oz heavy whipping cream 2 oz shredded swiss cheese 4 tsp olive oil Directions   Preheat over to 450 degrees. Line cookie sheet with foil and spray with cooking spray. Wash and cut potatoes. Cut potatoes into little sticks. Halve the onion and slice into thin strips. Mince parsley leaves. So because my life isnt already crazy enough, I figured why not go back to college!!! So today I have just finished my eighth week or first term. So far so good! I am attending Southern New Hampshire University. I am going for my BA in Psychology with a concentration in Forensic Psychology.  I already have attended college before (for like four years ...) so I only have 18 classes remaining. Most are specific to the degree so at least I have that going for me! But now I am trying to balance working full time, two toddlers (unless 4 year olds are not considered toddlers anymore), and now part time college! Even thought they are all online, figured I needed to be prepared! Amazon for the win. So the first week I actually had off work so I was able to get used to the whole online stuff. Cookie N Cream Cookies: Recipe

I LOVE to bake. I really do. But eating all the cookies, usually never happens but I still bake. This is one of my favorite recipes I have for cookies! The cookies are placed in the refrigerator for a few hours before they will be baked, so plan accordingly! Quick video here on the process:  view the quick video on the cookies Ingredients :  1 box of white/vanilla/yellow cake mix (I have used all of them) 8 tablespoons of butter, melted 1 egg 1.5 teaspoons of vanilla extract 5 ounces of cream cheese, melted 2.5 cups crushed Oreo's 1 cup white chocolate chips and chocolate chips (usually I do 1/3 regular and 2/3 white chocolate chips) Directions : Combine the cake mix, butter, egg, cream cheese and vanilla extract. Use a mixer to make a soft dough. Mix in the Oreo's and chocolate chips. Place dough in a bag and refrigerate a few hours.   Preheat over to 350 degrees. Place parchment paper on cookie sheet . So, busy mom and if you know, I really don’t like to cook. Baking I love but not really cooking. So after hours on Pinterest and looking at what I possibly would eat, I kind of gave up. Took a few dishes and pretty much created something between them all. Quick and easy to make in a crock pot. Ingredients 1 pound ground beef 1 pouch of taco seasoning   16 oz mild salsa 1 Bell pepper chopped (I use red) 1 can of corn  1 cup water 1/2 cup shredded cheddar cheese 1 bag of Frito's  Toppings of your choice! Shredded lettuce 1 cup shredded cheddar cheese 2.25 oz sliced olives  3 chopped green onions Directions Brown the ground beef., drain the grease. Mix in taco seasoning Add cooked ground beef, chopped bell pepper, can of corn (drained), salsa and water into the crock pot.  Cook on low for 5-6 hours OR high for 2-3 hours Prepare the toppings! Garden Update: 2 Months In

So we started the garden just about two months ago and so far it is going well! At this point, we have not really lost any plants themselves, just some seeding issues. We have also talked about expanding the garden a bit. More or less probably on the side oft he house when the summer is over and it begins to cool down a bit since summers here in AZ get so hot. But that is a plan for a few more months out! But none the less I am excited!! The watermelon seeds that we planted, did not sprout. I tried to germinate some more and get those to sprout but those also failed. So there went any hope to grow watermelon at this time. The kids were a bit sad as they love watermelons. The cayenne pepper seeds also did not sprout. But that was alright since we had a few other types of pepper plant already in the garden.  For the other two seed types, cantaloupe and pumpkin, they have sprouted and been transplanted! Disneyland 2020

As Steven and I approached our 6 year anniversary, we had plans and dreams of what we wanted to do. Maybe visit Hawaii, maybe hold up on some hotel without the kids? But naturally we decided to include the kids and make another trip to Disneyland. The time we decided this was a few weeks before we planned on going. So mid February-ish. Just about when the covid-19 virus was breaking through the news. Slowly it picked up and I had doubts in my head about going. Disneyland is full of people from everywhere and Disney Paris and I think Hong Kong were closed. So I was timid. Time drew nearer and the covid-19 was everywhere in the news and what not. We booked our hotels, since we were unable to get all nights at the place we wanted, we booked two hotels from the 5th to the 8th. A few days before we left, covid-19 had cases many places. I had Steven call the hotel figuring people would have canceled so we should be able to get all nights at the majestic gardens hotel. So he did. And we did a

A New Hobby: Gardening

Alright, I live in the Phoenix metro area of Arizona, USA. In the summers it can get to about 125 degree F and winters can be a bit nippy. Today is 3-22-20. It was about 67 outside today and partly cloudy. This weeks forecast goes from 62 tomorrow all the way to 87 next Thursday. That gives you an idea of what our general weather is for now. With all this COVID-19 stuff going on, mix that with my kids loving watermelon and strawberries, I said why not grow some! I told my husband and he went to the hardware store and got supplies. Came back showed me an idea and begun to build it. He then decided he didn’t like that and tried a different approach. Since it was not really “building” anything, it was easy to swap and try different ideas. He bought these bricks that are like puzzle pieces where all sides go inward. DIY Baby Food

I always thought about making my own baby food with Logan but it never happened. Then after Rosella was born, I decided to give it a try. We have a local farmers market and I had a week off when she started on solids.  The jars I have used are each 4oz. For less than $20.00, I picked up all this fresh fruits and veggies! A while back I purchased the Kindle version of  this book  to help direct me on my baby food making journey. Between the book and common knowledge I begun to create a bunch of different recipes. I add all the different recipes in here to the blog every so often so just look out for them or search for them.
