 I am not a fan of chicken at all, hunt me down later for that, but I have found one way I really enjoy them! My kids actually enjoyed them as well!  Ingredients   3 cups Shredded chicken  8 burrito flour tortillas 3 cups colby jack and monterry jack shredded cheese  16 oz sour cream 2 1/2 cups chicken broth 4 oz can of green chili peppers diced 3 tbsp butter 3 tbsp flour Directions   Preheat oven to 350 degrees Mix chicken and 2 cups of the cheese in mixing bowl.  Roll the mixture up in tortillas and place in a greased pan In a pan, melt the butter, stir in the flour and cook for one minute. Then add the broth and whisk until smooth. Heat until bubbly.  Stir in the sour cream and the chilies, but do not boil   Pour over the enchiladas and add the remaining cheese on top. Bake for 20 minutes and then broil for three additional minutes.

Ok so like this all happened in June 2021…. But I just got it done. Hahaha.  So I have been bothering Steven to go up north anywhere and go hiking or do something in general didn’t matter what just wanted to go up north. so Friday morning I sent Steven a hotel and said we can get the kids and go after work and a spend the weekend up there.  Steven ended up coming to me about 10 in the morning and saying this is your only offer. That offer was: leave after work pick up the kids drive up to Williams AZ. Spend the night get up early go fishing, go through Bearizona, then head to the Grand Canyon. After that head on back home.  So of course I said yes because I’ve been bugging him to do something. So I packed the bags on my lunch and got ready for our trip. It was a three hour drive to the hotel. Longggg three hours. The kids were not having it. We got to the hotel in Williams late that night, after the sun went down. The kids were restless.  Once we got checked in, we were hungry. We walk
