Taco Chip Salad: Recipe


So, busy mom and if you know, I really don’t like to cook. Baking I love but not really cooking. So after hours on Pinterest and looking at what I possibly would eat, I kind of gave up. Took a few dishes and pretty much created something between them all. Quick and easy to make in a crock pot.

Ingredients

  • 1 pound ground beef
  • 1 pouch of taco seasoning 
  • 16 oz mild salsa
  • 1 Bell pepper chopped (I use red)
  • 1 can of corn 
  • 1 cup water
  • 1/2 cup shredded cheddar cheese
  • 1 bag of Frito's
  •  Toppings of your choice!
    • Shredded lettuce
    • 1 cup shredded cheddar cheese
    • 2.25 oz sliced olives 
    • 3 chopped green onions
Directions
  1. Brown the ground beef., drain the grease. Mix in taco seasoning
  2. Add cooked ground beef, chopped bell pepper, can of corn (drained), salsa and water into the crock pot. 
  3. Cook on low for 5-6 hours OR high for 2-3 hours
  4. Prepare the toppings! Shred lettuce, chop green onions, drain olives
  5. Turn off crock pot and stir in 1/2 cup cheddar cheese 
  6. Place Frito's at the bottom of a bowl, then the ground beef mixture followed by the toppings of your choice.
