White Creamy Chicken Enchiladas: Recipe
I am not a fan of chicken at all, hunt me down later for that, but I have found one way I really enjoy them! My kids actually enjoyed them as well!
Ingredients
- 3 cups Shredded chicken
- 8 burrito flour tortillas
- 3 cups colby jack and monterry jack shredded cheese
- 16 oz sour cream
- 2 1/2 cups chicken broth
- 4 oz can of green chili peppers diced
- 3 tbsp butter
- 3 tbsp flour
Directions
- Preheat oven to 350 degrees
- Mix chicken and 2 cups of the cheese in mixing bowl.
- Roll the mixture up in tortillas and place in a greased pan
- In a pan, melt the butter, stir in the flour and cook for one minute. Then add the broth and whisk until smooth. Heat until bubbly.
- Stir in the sour cream and the chilies, but do not boil
- Pour over the enchiladas and add the remaining cheese on top.
- Bake for 20 minutes and then broil for three additional minutes.
