New Adventures Soon!

I grew up where every summer my family would take our travel trailer for two weeks to a new destination and see the USA. I have dreamt of doing this with my kids. My husband and I have talked about getting one for so long but we never did. Until April 16 2022. We bit the bullet and bought a small Coleman Camper! It sleeps 6 people, but has a queen and a bunk bed which is perfect for us 4. No slide outs and basically minimal things. Has a fireplace for heat and an AC, shower, toilet, microwave, fridge, two burners and a sink. Not super fancy but perfect for our little young family. We upgraded and added some things.  Our must have list  for camping and trailers! We took it out so many times the year we bought it. Various places within AZ. Some campsites, some off the grid areas. Though while having hookups is nice, there is something about just parking the trailer in the middle of no where, sitting outside among the trees with a generator going every once in a while and letting...

The Polar Express

Here in Arizona, we don’t get snow down in Phoenix, but up north in Flagstaff, it does. Over the last few years, we’ve seen stuff about a polar express train up there and we decided the kids were finally old enough to go. Logan was six and Rosella was four. So we took our trailer up to the campground up there, and my mum, as well as my sister and her husband rented a cabin at the same campground. We booked our tickets for the Saturday following Thanksgiving so me and the kids and my husband drove up on Friday black Friday. My mum sister and her husband drove up Saturday.  As we were driving up, we noticed a deer farm where you could feed and pet deer. So naturally we stopped because I always have to stop these kind of places. The experience we had at the deer farm was phenomenal. We got to be the day are they wanted around they followed us we could put them there. We had other animals too, but they had so many deer. Creamy Spaghetti: Recipe

Creamy spaghetti is one of my favourite spins on traditional spaghetti. While I do not really like tomato sauce, this replaces it with a creamy sauce. My husband is not too fond of it; he doesn't care for pasta; but between the kids and I, we love it!  Ingredients:  1 to 1 1/2 pounds of ground mild Italian sausage  1 bell pepper diced 1/4 onion diced 1 tbsp minced garlic 2 tsp Italian seasoning  10 oz can of fire roasted tomatoes (or mild tomatoes if you don't want the spice) 3 cups chicken broth or stock 10 oz dried spaghetti  pinch of black pepper pinch of salt 2 tbsp extra virgin olive oil 3/4 cup heavy whipping cream 1/2 mozzarella cheese  Directions: Heat the olive oil in a medium pan Combine the bell pepper and onion in when the oil is warm for two minutes, then add the garlic Mix in the Italian sausage until it is brown. Break into small chunks while it is cooking Stir in the Italian seasoning, salt and pepper, tomatoes, broth/stock and dried noodles...

The Chicken Project

 Alright! So we talked about it for years and we always told ourselves we would be getting a farm, that did not happen. But we did still get the chickens!!!  While I am sooo late in writing this, like 5 months later, the chickens are amazing! We originally bought four chicks. All females. Well at this point we still have all four hens! They have been laying eggs for a few months. They did great thru the hot summer here!   We named them some odd names. Well kind of like food names . Nugget, meatball, dumpling and squeakers (she is quite loud!) The kids love the chickens! They are so sweet and Logan loves to hold them! Rosella, well she is a bit timid with them but she loves them as well. We let them out of their coup to wander the grass for a bit when we can. 

Some Exciting News!

Over the course of the last what like two years, we have been looking here and there at new homes. Mainly new builds. Figured that we could get a brand new house customized to exactly what we wanted and needed since after we had Rosella, the house we bought 7 years ago is seeming small. Well, Steven was never really on board with the whole "moving" thing.  FINALLY! He realized that we did in fact need a larger house and more backyard space. So December 2020 we called our realtor, who I might add we have been using and staying in contact with since we bought our first home in 2014. And we begun looking. We slowly got our house ready to go on the market since we were not listing it until we were under contract with a new house.  We really did not want to rush into any house we didnt love since we were basically looking for the house we will be in until the kids move out. Fondue Sliders with Fries: Recipe

 So many people have expressed an interest in this little meal I make. Although my husband and kids are not too fond of it, for different reasons, I love it! It is probably one of my favorites and I can make it just for me when I need (without the onions and fries). But still, even the dipping sauce for the fries I can make within a minute if we are making something else with fries. Ingredients 1 pound ground beef 12 Brioche rolls 1 large red onion 1/2 oz parsley 1/2 oz chopped garlic  3 russet potatoes  2 tsp smoked paprika  2 1/2 oz thousand island dressing 2 fl oz heavy whipping cream 2 oz shredded swiss cheese 4 tsp olive oil Directions   Preheat over to 450 degrees. Line cookie sheet with foil and spray with cooking spray. Wash and cut potatoes. Cut potatoes into little sticks. Halve the onion and slice into thin strips. Mince parsley leaves. Mix thousand island, garlic, parsley and smoked paprika together. Set aside. Toss cut potatoes in 1 tsp of olive oil...

Adding to the Chaos by Going Back to College!

So because my life isnt already crazy enough, I figured why not go back to college!!! So today I have just finished my eighth week or first term. So far so good! I am attending Southern New Hampshire University. I am going for my BA in Psychology with a concentration in Forensic Psychology.  I already have attended college before (for like four years ...) so I only have 18 classes remaining. Most are specific to the degree so at least I have that going for me! But now I am trying to balance working full time, two toddlers (unless 4 year olds are not considered toddlers anymore), and now part time college! Even thought they are all online, figured I needed to be prepared! Amazon for the win. So the first week I actually had off work so I was able to get used to the whole online stuff. I have done online classes before, like years ago. I looked back at my transcripts for when I did attend school and it has been SIX YEARS. But hey, no time like the present.  My first class was In...
