White Creamy Chicken Enchiladas: Recipe

 I am not a fan of chicken at all, hunt me down later for that, but I have found one way I really enjoy them! My kids actually enjoyed them as well!  Ingredients   3 cups Shredded chicken  8 burrito flour tortillas 3 cups colby jack and monterry jack shredded cheese  16 oz sour cream 2 1/2 cups chicken broth 4 oz can of green chili peppers diced 3 tbsp butter 3 tbsp flour Directions   Preheat oven to 350 degrees Mix chicken and 2 cups of the cheese in mixing bowl.  Roll the mixture up in tortillas and place in a greased pan In a pan, melt the butter, stir in the flour and cook for one minute. Then add the broth and whisk until smooth. Heat until bubbly.  Stir in the sour cream and the chilies, but do not boil   Pour over the enchiladas and add the remaining cheese on top. Bake for 20 minutes and then broil for three additional minutes.

Creamy Spaghetti: Recipe

Creamy spaghetti is one of my favourite spins on traditional spaghetti. While I do not really like tomato sauce, this replaces it with a creamy sauce. My husband is not too fond of it; he doesn't care for pasta; but between the kids and I, we love it!  Ingredients:  1 to 1 1/2 pounds of ground mild Italian sausage  1 bell pepper diced 1/4 onion diced 1 tbsp minced garlic 2 tsp Italian seasoning  10 oz can of fire roasted tomatoes (or mild tomatoes if you don't want the spice) 3 cups chicken broth or stock 10 oz dried spaghetti  pinch of black pepper pinch of salt 2 tbsp extra virgin olive oil 3/4 cup heavy whipping cream 1/2 mozzarella cheese  Directions: Heat the olive oil in a medium pan Combine the bell pepper and onion in when the oil is warm for two minutes, then add the garlic Mix in the Italian sausage until it is brown. Fondue Sliders with Fries: Recipe

 So many people have expressed an interest in this little meal I make. Although my husband and kids are not too fond of it, for different reasons, I love it! It is probably one of my favorites and I can make it just for me when I need (without the onions and fries). But still, even the dipping sauce for the fries I can make within a minute if we are making something else with fries. Ingredients 1 pound ground beef 12 Brioche rolls 1 large red onion 1/2 oz parsley 1/2 oz chopped garlic  3 russet potatoes  2 tsp smoked paprika  2 1/2 oz thousand island dressing 2 fl oz heavy whipping cream 2 oz shredded swiss cheese 4 tsp olive oil Directions   Preheat over to 450 degrees. Line cookie sheet with foil and spray with cooking spray. Wash and cut potatoes. Cut potatoes into little sticks. Halve the onion and slice into thin strips. Mince parsley leaves. Mix thousand island, garlic, parsley and smoked paprika together. Set aside. Toss cut potatoes in 1 tsp of olive oil...

Taco Chip Salad: Recipe

So, busy mom and if you know, I really don’t like to cook. Baking I love but not really cooking. So after hours on Pinterest and looking at what I possibly would eat, I kind of gave up. Took a few dishes and pretty much created something between them all. Quick and easy to make in a crock pot. Ingredients 1 pound ground beef 1 pouch of taco seasoning   16 oz mild salsa 1 Bell pepper chopped (I use red) 1 can of corn  1 cup water 1/2 cup shredded cheddar cheese 1 bag of Frito's  Toppings of your choice! Shredded lettuce 1 cup shredded cheddar cheese 2.25 oz sliced olives  3 chopped green onions Directions Brown the ground beef., drain the grease. Mix in taco seasoning Add cooked ground beef, chopped bell pepper, can of corn (drained), salsa and water into the crock pot.  Cook on low for 5-6 hours OR high for 2-3 hours Prepare the toppings!
